Pesto Pizza

This is one of my favorite homemade pizzas because it's so simple to make, and it is much healthier than most store-bought pizzas. You can also use whole wheat pita bread to make it even healthier. This recipe makes 4 servings, so feel free to adjust it. 

     Ingredients:
  • 4 pita bread rounds
  • 1/2 cup pesto
  • 2 tomatoes, sliced
  • 1 (4 ounce) container crumbled feta cheese

    Direction:

  1. Preheat oven to 375 degrees F (190 degrees C). Arrange pita bread on a baking sheet.
  2. Bake in preheated oven until pita is lightly toasted, about 4 minutes.
  3. Spread pesto evenly over toasted pita bread and arrange tomato slices in a single layer. Top with feta cheese.
  4. Continue baking until feta cheese is browned and pita bread is crisp, about 11 minutes more.

Mini Cheesecakes

Cheesecake is one of my favorite foods, and in my quest to find the perfect recipe, I came across many mediocre ones. This recipe, however, is my favorite. The original recipe makes 48 mini cheesecakes, but you can adjust the ingredients to your liking.
        Ingredients

  • 1 (12 ounce) package vanilla wafers

  • 2 (8 ounce) packages cream cheese

  • 3/4 cup white sugar

  • 2 eggs

  • 1 teaspoon vanilla extract







          Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners.
  2. Crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.
  3. In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top.
  4. Bake for 15 minutes. Cool.












You can also serve this with any flavored pie filling on top, or experiment with different crusts or flavors.
